Abstract

Developed potentiometric multisensor system, which includes cross-sensitive PD sensors,
analytical signal which is the Donnan potential, ion-selective electrodes (ISE) and algorithms for
multidimensional data from an array of sensors, allows the analysis of reconstituted milk. The analysis is
based on the change in the concentration of lysine, cysteine, thiamine and ion-molecular calcium in the
restored milk at a variation of the percentage of dried milk.
