Определение каротиноидов методом ВЭЖХ, их антиоксидантная активность и влияние на здоровье человека (обзор)

Аннотация

Каротиноиды – широко распространенные соединения в пищевых продуктах. Их обнаружено около 1100, в значимых количествах в пище около 50, в плазме крови обнаружено 30 каротиноидов. Основные методы определения каротиноидов – это методы ВЭЖХ с разными детектирующими системами. Для идентификации каротиноидов используют методы ВЭЖХ с МС и МС-МС детекторами. С использованием методов ВЭЖХ созданы базы данных содержания каротиноидов в пищевых продуктах во многих странах Америки, Азии и Европы. За счет многих сопряженных связей (до 11) каротиноиды обладают антиоксидантной активностью.

Наибольшей антиоксидантной активностью обладает астаксантин, находящейся в красной рыбе, красной икре и креветках. За счет антиоксидантной активности каротиноиды обладают значительными оздоровительными эффектами. Регулярное потребление каротиноидов значительно снижает риск самых опасных болезней: сердечно-сосудистых, онкологических, диабета и др. Наибольшая смертность населения от этих болезней. Каротиноиды подавляют окислительный стресс-предшественник многих болезней, в т. ч. и самых опасных. Каротиноиды повышают иммунитет, убирают воспалительные процессы. Они эффективны при болезнях глаз и печени. Каротиноиды производят в мире в больших количествах, глобальный рынок более 1.5 млрд. долларов. Производятся в больших объемах: бета-каротин, ликопин, лутеин и астаксантин. По влиянию каротиноидов на здоровье человека опубликовано более 6000 научных работ.
